11/11/11 Imperial Duncan Taylor cask 50053

A 16yo 1995 single cask Imperial, bottled by Duncan Taylor.

Orange marmalade on toast, walnuts. Dry dusty oak.

Really needs a lot of water to get to the character of the dram, about 1:1.

With all that water a lot more fruit becomes apparent: spiced blackberries, pears, ginger, sultanas, dried apricots.

I like it a lot. Actually, I should really say that I admire it a lot. It’s a complex wee beastie, sophisticated. Needs some work to get the best out of it.

When I first poured it I really thought it was going to be a 2/5 or even a 1 but it doesn’t deserve that.

21/03/11 Imperial Cask 449

A 19yo single cask (449) from Imperial tonight, a Duncan Taylor bottling.

This is the only whisky I’ve ever tried from this fairly unknown distillery.

Apple and bramble crumble, with creme anglaise!

Lovely sweet, slightly spicy dram this with long gentle finish.

Some water really helps, I’ve settled on about 30% water as a sweet-spot. Very drinkable, very smooth. Beautifully balanced and very subtle.
