Hibiki 12yo
A blend of Yamazaki and Hakushu tonight, Hibiki is a dram I’d never heard of until recently.
Red apples
Strawberries
Plums
Candied peel
Cloves
Vanilla Creme anglaise
Sharp, gristy grain
Good balance between super-sweet sugar, light spices and tangy fruit.
Very impressive but not a dram I’ll be rushing out to buy a bottle of. Perhaps a little sweet for my palate.
